There are many restaurant concepts to choose from. We wanted to avoid a cuisine that was “too” different, such as fusion cuisine. However, we also did not want to copy a theme from an existing restaurant or chain. Although we wanted to blaze our own trail, we also decided not to experiment too much and go with something strange or quirky right out of the starting gate.
Basically, we are simple guys that like good food. Therefore, we have broken down our restaurant ideas into 3 basic concepts. Hopefully, people will find these concepts familiar. But our goal is to add our personal touches and taste to each concept and provide a comfortable, yet unique dining experience for our customers.
Although all of the concepts we have decided upon have been tried, we do not feel obligated to let everyone know all of our ideas. Therefore, each restaurant concept listed below has a small description and perhaps a menu item or two in order to give you a feel of what we are trying to achieve.
Oh by the way, we plan to have a significantly well stocked bar as well.
Burgers & Beer
The Burgers & Beer Concept is based upon the idea of a simple place to hang out, have good burgers, enjoy a couple of drinks and have fun with friends. The idea is a casual place with above board burgers. The key to making a successful burger place is the meat quality and proper seasoning. Although the focus of the menu will be burgers, there will also be chicken, turkey, and vegetarian options as well as other non-burger items. In this concept, we plan on having a large selection of beers from microbreweries as well as imports, but mixed beverages will not be overlooked.
Menu Items:
Beer Battered Onion Rings: Beer batter from specific microbrewery red ale with selected herbs and spices. This recipe is the end all be all onion ring recipe.
Seasoned Steak Fries: Fresh cut Kennebec potatoes deep fried in our special recipe blend frying oil combination and seasoned to perfection with our special seasoned salt.
Ancho Chile Burger: Burger, cooked to order, with pepper jack cheese, a roasted ancho chile, chipotle mayo, red onion slices, lettuce, and tomato. Choice of wheat bun, white bun, or onion roll.
Swine Bleu Burger: Burger, cooked to order, with two strips of bacon, bleu cheese, house mayo (secret recipe), red onion slices, lettuce, and tomato. Choice of wheat bun, white bun, or onion roll.

California Steak House
The California Steak House concept is a step up from the burger concept, but still a casual dining experience. Although there will be a large beer selection, there will be an even larger wine selection. The idea encompasses a casual dining experience for groups of friends, romantic couples or families together in one location. The quality of meat is vital for the success of this concept. Although steak will be the main focus, there will also be prime rib, chicken items, burgers, seafood, and other menu items.
Menu Items:
Prime Rib: Choice cut of mid western corn fed prime rib cooked to order and covered with our own special pepper and herb spice rub and slow cooked to a juicy perfection. Cut choices of 12oz, 16oz, or 32oz.
Blackened Top Sirloin: Choice cut of mid western corn feed beef cooked to order with a heavy covering of our special Cajun blend of spices to add a special kick. Cut choices of 8oz or 12oz.
Buttermilk & Garlic Mashed Potatoes: Cooked red potatoes well mashed with fresh buttermilk, roasted garlic and crumbled bacon.
Rosemary Chicken Breast: A boneless, skinless 6oz chicken breast marinated in fresh rosemary, olive oil, other herbs and lemon juice and then finished on the grill. This is a true mouth pleaser.

American Grill
The American Grill Concept is the easiest to explain, but probably the hardest to plan due to the large encompassing menu in which it involves. The American Grill Concept basically encompasses both the Burgers & Beer Concept, and the California Steak House Concept with some limitations and some expansions. The limitations involve the number of burger and steak choices, and the expansions include adding pasta, pot roast, and other baked options. We would like to have a casual dining experience with a nice selection of beers and wines. The main focus will be a variety of great dinner choices such as beef, chicken, pasta, and vegetarian dishes.
Menu Items:
Tipsy Chicken: A boneless, skinless 6oz chicken breast cooked with bourbon, onions, chopped fresh peaches and spices.
Maple Roasted Ribs: Pork ribs slow cooked with a maple syrup and onion glaze.
Prime Rib Sandwich: A slice of our slow cooked prime rib, thrown quickly on the grill and served on fresh sourdough bread with grilled onions and creamed horseradish.
Bleu Poppers: An appetizer of battered and deep fried jalapeno peppers stuffed with white cheeses and blue cheese. Served with a mild chipotle ranch dipping sauce.
